Is it wrong to take a deep breath on purpose when I forget to observe my breath?

No,

It's okay.

As long as you adhere to a larger framework and teaching and guidelines and slight variations of how you actually do your training,

It's okay.

For example,

Opening your eyes or counting your breath.

But the methodology itself is wrong.

But if you're using that deep breath to refocus yourself,

Your awareness on the breath,

Then that's okay.
